If you can’t find kohlrabi at your local grocery store or farmer’s market, you can substitute any combination of turnips, radishes, rutabaga and butternut squash. I used half rutabaga and half butternut squash and it came out delicious! A pinch of black pepper won’t add a significant amount of oxalates, but if you are being careful, sub with white pepper.
