Hello and welcome to Low Oxalate Kitchen!
My name is Vincent Cilento, and I started this project after years of trying to figure out how to actually eat a low oxalate diet. This adventure started when I passed my first kidney stone back in 2006, when I was just a freshman in college at Rutgers University.
I had the stones that I passed analyzed, met with a few doctors, and then towards the end of one of my visits, one of them mentioned a low oxalate diet, and that I should follow it from now on in order to help prevent more kidney stones from forming in the future.
I took the pamphlet they gave me, went home, did a bit of research, couldn't find anything useful, and just decided to stick to the list I was given of about 15 or so foods to avoid. I have since learned that I was only scratching the surface of what a low oxalate diet really entailed.
My experience then, combined with the kind of education I was lucky to receive, gave me the knowledge and tools needed to sort through the mess of information I found on the internet surrounding low oxalate diets.
I received a bachelor's degree in Exercise Physiology from Rutgers in 2010, and one of the most important things I learned during that time was how to separate accurate information and reliable sources, from the inaccurate and unreliable ones. Those of you who have done any research on low oxalate diets can imagine how useful of a skill that turned out to be.
If your doctor has ever handed you a semi-legible, incomplete, and outdated list of high oxalate foods to avoid, and you've gone home to look for information only to be overwhelmed with even more disorganization, you are certainly not alone, and have come to the right place!
My goal is to make following a low oxalate diet as easy as it should be, and to provide you with simple recipes, reliable information and convenient resources to help you take control of your health.
